We eat a lot of berries and we eat a lot of fresh salsa in the summer. A salsa recipe with berries in it? Makes perfect sense to a berry farmer. This blueberry salsa was delicious and we will be making it again and again. Especially since the tomato blight always ruins our tomatoes just about.....right NOW. And if substituting blueberries for tomatoes in salsa is the world's answer to tomato blight? We couldn't be more pleased.
Those are yellow tomatoes you see in that bowl because blight, you ain't got us yet.
The best part of this recipe was the cookbook it was found in, "For the Love of Food: seasonal recipes for every palate and every occasion" written by local Denman Island resident, Sally Rae Dyck. She may be better known as Gourmet by Sally Rae. Sally has a written a lovely cookbook with an emphasis on eating seasonally. The chapters are arranged by month so you can readily find and make recipes with fresh ingredients that are grown and or available locally. Sally's recipes celebrate good, tasty food but also the bounty of fresh food we have access to in the Comox Valley. Next up we're making, you guessed it, the strawberry salsa.
